Bi Luo Chun "AA" (Emerald Spirals of Spring), 2025
Bi Luo Chun is a spring harvest tea from the province of Dong Ting, near Lake Tai Hu. Literally translated as "Emerald Spirals of Spring", although according to legend, this is its second name. The first was "Xia Sha Zhen Xiang" or "Knock-Your-Foot Fragrance". This name was due to the harvest during the flowering of fruit gardens, which gives the tea a captivating aroma. But the emperor, who tasted this drink, found the name rude and he ordered it to be renamed to the already familiar Bi Luo Chun.
Playful flagella of green tea, which combines the incompatible: sweet flowers, smoked meats, and maybe even fried tofu. The infusion is light green, with a dance of fluffy kidney villi inside. The aroma contains a little jasmine, melon and watermelon rinds, pear. Evening green tea, it will be felt by receptors already tired after the day. At the same time, it is soft and is not going to go into bitterness, even if you torture it in a mug. It goes well with food, and completely different: from a snack of fruit to a full dinner.
For brewing, it is best to use a porcelain or glass gaiwan and water cooled to 55-70 degrees. Or make Ice Tea by leaving the tea in the refrigerator overnight, filled with clean cold water.
