Origin
The days of early spring are light and fleeting, when the cheerful drops of birch sap sound alongside the swelling buds and timid white commas of snowdrops. It can be collected only a couple of weeks a year, and fresh birch sap cannot be compared with canned: unforgettably sparkling, bright, sweetish and refreshing. It is all the more surprising that tea, so reminiscent of our native birch sap, can be found on the shelf with quite budget-friendly, basic Taiwanese oolongs.
Aromatics
Simple farm GABA – and how many impressions: sour freshness of birch sap, notes of clover and lilac flowers, fruity tones of currant, pear and plum. You can also catch more familiar notes of bakedness and breadiness, and the sour tone of GABA in the oily wheat-yellow infusion, familiar to all lovers of GABA oolongs, is also here. The tea is unsweetened, gentle and refreshing.
Brewing
Like any other, this GABA works best in hot water, 90-95 degrees. You will need 5 grams of leaf per 100 ml of the volume of the vessel for drinking by infusion. For oolong, it is better to use a gaiwan or porcelain teapot. For a mug - 1.5-2 grams. The leaf, by the way, is also very nice: small brownish peas with dark golden stems, each of which contains a single tea leaf.
State
Along with Tie Guan Yin, this oolong is about spring. But if the classic Tie Guan Yin sounds like a blooming garden in May, the middle of spring, filled with the aroma of flowers and herbs, then this GABA is the earliest weeks of March, the awakening of the earth from winter sleep. The tea is perfect for contemplating the changing weather outside the window, will complement the evening with its soft calming effect, smooth out spring anxiety.
