Hong Shuei "AA" (Red Water Oolong)
"Red Water Oolong" is a special variety of Taiwanese oolongs with a fermentation level close to red tea. Red water oolongs are based on oolong raw materials, but instead of leaving the fermentation somewhere in the middle, as is usually done, it is brought to the end. This technology gives the tea the subtlety and elegance of oolongs and some of the warmth and flavor profile of reds. This particular example is made from a bush of the Si Ji Chun variety.
Greenish-brown leaves of dense twist, transparent yellow infusion. Juicy fruity-bready aroma with creamy notes. Clean, soft taste with sourness, filled with berry-fruity notes. Silky texture. The aftertaste is sweet and light. Its taste is not worth describing for a long time, although there is something to talk about. The feeling of lightness and ease combined with warmth and composure disposes to the perception of this tea in the style of "drank and understood".
A dense live tea, filled with qi to the brim. The state balances between slight relaxation and physical tone. It is easy to drink, impossible to overbrew. Everything in it is clear, as it should be in red water oolongs.
