Bin Xiang Dan Cong "AAA", 2025 (Lonely Bushes with Frosty Aroma)
After the standard partial oolong fermentation, Ya Shi Xiang's old tea was not dried and heated, but placed in a vacuum in a wet state and frozen. This is what Dan Tsunam was missing! Thanks to this processing technology, the taste acquired frost and depth, which perfectly sets off the usual floral notes. Biochemistry now proceeds differently. The juiciness of the taste is what you want to shout and talk about here. Incredibly juicy taste!
And you have to at least look at it. The leaf is whole, strange, contrasting in color and character: screamingly light green petioles with leaves the color of deep-sea algae. Longitudinal uneven twist. The aroma is deep, richly floral: lilac, apple, jasmine. In addition, you can smell sweet cream buns and condensed milk.
Paradoxically, despite its internal cold, it warms and wraps up. From the fifth infusion it begins to resemble sheng. Sweetness fades into the background, astringency and roughness already set the tone. And tobacco notes appear. The aroma is still as bright and floral. An extraordinary tea for special occasions. And thanks to its contrasting properties, it will be good in any weather and season.
It is recommended to brew in a gaiwan, with soft water, 80-90 degrees. The steepings are short.
