Fu Shou Li Shan (Pear Mountain Oolong)
High mountain oolong tea from the Li Shan region, around Fu Shou Peak.
Colour of the infusion: yellow-golden.
Aroma and taste: Herbal-floral aroma with creamy notes, brightness of hyacinth, tenderness of rose and fatness of butter. The taste is sweet with a slight tartness, herbal fresh bitterness and a bit of spicy salt. The aftertaste is expressed not so much in taste sensations as in volume. It seems to expand in the mouth, playing with waves of hot air.
When to drink: Ceremonial oolong with a strong effect. It envelops you from all sides, lifts you above the ground, gives you wings and confidence and says: "Fly, now you can." And inside you everything is simple, calm and good.
Impressions: Sublime, but not cold, but warm and supportive oolong. Plays with all facets of aroma in tea pairs, arranges fireworks in the mouth, drinks long and beautifully.
Food Pairing: Dreamy tea pairs with an equally dreamy dessert of creamy ricotta and sweet-spicy baked apple-cinnamon jam.
