Sencha is a type of Japanese green tea in which the leaves are steamed, rolled, and dried shortly after harvesting to prevent oxidation. More specifically, the term generally refers to tea made from unshaded leaves, in contrast to shaded Japanese teas such as gyokuro.
Genmaicha is made by blending sencha with roasted rice. There are different proportions, but a 1:1 ratio of roasted rice to tea leaves is particularly popular. Because the blend contains less tea leaf per serving than pure sencha, genmaicha generally contains less caffeine than sencha and other green teas.
